Chandigarh is the closest big city to Manali at 310 km, and the only mainstream entry point where you can leave after breakfast and arrive the same day in daylight. If you can fly into IXC, do.

NH205 through Bilaspur, Sundernagar, Mandi and Kullu. Seven to eight hours with stops. The Kiratpur–Nerchowk four-lane stretch has cut a lot of time off this drive.

Bhuntar is 50 km from Manali, but flights are weather-dependent and limited.

Yes. Every Delhi package can be re-quoted from Chandigarh, which removes the Volvo fare and usually the two overnight bus legs. Ask on WhatsApp with your dates.
The highway itself stays open through winter. Heavy snowfall can slow the last stretch above Kullu, and that is when a local driver with chains matters more than the vehicle model.
